THE VINES
The grapes for this full-bodied red blend are sourced from the Dell Valley region of West Texas.

WINEMAKING
This blend is composed of 80% Cabernet Sauvignon and 20% Petit Verdot. The wine was aged for 24 months in neutral French oak barrels. The Cabernet Sauvignon was picked at different times to achieve both lighter, "greener" profiles from earlier picks and more concentrated fruit and heavier tannins from later ones.

TASTING NOTES
The Cabernet Sauvignon delivers a rich core of blackberry, plum, cassis, and tobacco. The Petit Verdot enhances the blend with deep color and notes of violet, sage, and spice. It is a full-bodied and structured wine with firm, polished tannins and vibrant acidity, reflecting the Dell Valley's warm, high-elevation climate.

FOOD PAIRING
This wine is a perfect match for hearty dishes like dry-aged beef (bone-in ribeye or porterhouse), carne asada tacos, pulled pork tacos, and chili-rubbed grilled quail or venison.
