2021 Bourbon Barrel

THE VINES
The Tannat for this wine is from Newsom Vineyards in the Texas High Plains and was aged for more than 36 months in barrels.

WINEMAKING
This unique wine was crafted using cryo-maceration and flash détante, followed by traditional whole-berry fermentation in half-ton bins. After aging in traditional wine barrels, the Tannat was "pumped over" into empty whiskey barrels that still held approximately 3.5 gallons of soaked-in bourbon.

TASTING NOTES
A fully lush and impressive full-bodied wine with a deep purple color. It offers subtle tannins and a smooth, lingering finish. The beautiful nose has a hint of bourbon. Flavors include buttery vanilla, butterscotch, fresh fig, and caramel toffee.

FOOD PAIRINGS
Pair this wine with bacon-wrapped dates, bourbon-braised pork chops, bacon cheeseburgers, T-bone steaks, Wagyu sliders, or red wine-braised short ribs.
