2023 Reserve Cabernet Sauvignon (Oakville)

THE VINES 
This is M3 CELLARS' flagship 100% Cabernet Sauvignon, sourced from the highly revered Tamber Bey Oakville Estate Vineyard. Nestled among some of the most legendary vineyards in the Oakville AVA, the old vines are lovingly tended and ripened to perfection.

WINEMAKING
This 100% Cabernet Sauvignon was fermented in both stainless steel and French oak barrels. It was then aged for 19 months in French oak, with 60% being new barrels.

TASTING NOTES
This is a big, powerful, and concentrated wine. It presents an "iron fist in a velvet glove". The flavors include chocolate-covered cherry, raspberry jam, and black tea.

FOOD PAIRINGS
This wine is for the most discriminating of palates. Pair it with a tomahawk steak with bourbon and Dijon mustard reduction. It also complements aged cheeses like aged cheddar, aged gouda, Pecorino Romano, and Parmigiano-Reggiano.
