2023 Jericho Cowboy

THE VINES
This exquisite red blend is a unique collaboration between California and Texas. The Petit Verdot (95% of the blend) was sustainably grown in the Tzabaco Rancho Vineyards of Dry Creek Valley, where the vineyards have been farmed by the same family since 1856. The Mourvedre (5% of the blend) was sourced from Lahey Vineyards in the Texas High Plains.

WINEMAKING
The grapes were hand-harvested and aged for 23 months in French oak barrels (75% second-use and 25% new).

TASTING NOTES
The color is a dark, opaque red from core to rim. The aromatics offer notes of black cherry, currant, green peppercorn, and hints of mocha. Although Petit Verdot is traditionally a blending grape, one sip will show you it was made to stand alone. This wine has a dark intensity with notes of sage, plum, and candied violet, finishing with a rich tannin. The full-bodied palate presents firm tannins, black cherry, and hints of cedar on the finish.

FOOD PAIRINGS
This full-bodied red is perfect for dishes like veal, spicy pork, and beef short ribs. It also complements smoked paprika, white pepper, and cheeses like Pecorino Romano and smoked gouda.
