THE VINES
The grapes for this 100% California red blend are sourced from different terroirs within Sonoma County's Dry Creek Valley.
WINEMAKING
This "BIG RED" is a blend of 80% Cabernet Sauvignon, 10% Petit Verdot, 5% Merlot, and 5% Cabernet Franc. The wine was aged for 24 months in French oak, consisting of 70% second-use and 30% new oak.
TASTING NOTES
The color is a beautiful, impressive dark red, opaque from core to rim. The aromatics give off notes of white pepper, allspice, black cherry, and hints of leather. The palate is full-bodied and complex with firm tannins, dark berry flavors, dried herbs, and toasted cedar on the finish. The mouthfeel is most pleasing, with a finish that lingers and begs for another sip.
FOOD PAIRINGS
This wine is made for beef. Pair it with bone-in beef ribeye, "barrel cut" beef tenderloin, prime rib, or gorgonzola cheese.
